Ingredients
  

  • 4 Large Roma tomatoes, seeded and diced
  • 1/2 red onion, diced
  • 15 oz can black beans, rinsed and drained
  • 15 oz can black eyed peas, rinsed and drained
  • 10 oz package frozen corn kernels, thawed
  • 1 green bell pepper, seeded and diced
  • 1-2 jalapenos, seeded and diced
  • 1 bunch cilantro, chopped
Dressing
  • 1/3 cup olive oil
  • 1 tbsp white wine vinegar
  • 1 tbsp granulated sugar
  • 1 lime, juiced
  • 1/2 tsp chili powder
  • 1/4 tsp garlic powder
  • 1/4 tsp cayenne pepper, optional for more spice
  • Salt and pepper, to taste

Method
 

  1. Add the dressing ingredients to a small bowl and combine. Taste and adjust if needed.
  2. In a large bowl, combine the cowboy caviar ingredients.
  3. Pour the dressing on top and toss together.
  4. Cover and refrigerate until ready to serve. Serve with tortilla chips.
