Ingredients
  

  • 3 lbs frozen meatballs
  • 20 oz can pineapple chunks, drained with juice reserved
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 1/2 cup rice vinegar
  • 1/2 cup ketchup
  • 1/2 cup brown sugar
  • 3 tbsp soy sauce
  • 2 tbsp cornstarch
  • 1/4 tsp ginger powder
  • Cilantro, for topping
  • Sesame seeds, for topping

Method
 

  1. Add frozen meatballs, pineapple chunks, red and green bell peppers, and onions to slow cooker.
  2. In a bowl, mix the pineapple juice, rice vinegar, ketchup, brown sugar, soy sauce, cornstarch, and ginger powder together. Pour into slow cooker.
  3. Place lid on top and cook on the low setting for 4-5 hours or high for 2-3 hours, until meatballs are heated through and reach 160°F internally.
  4. Stir meatballs and coat in the sauce. Top with cilantro and sesame seeds before serving.
